I have the same problem as you with a GTX 560 TI, for cons I was able to start once more or less correctly (there were lots of artifacts on the screen) and now when I start the game I have a red screen and the games freeze. Sorry if my English is not correct I'm French!

More info...

I have tried to modify the game resolution adding the following to the config file but did not help.
r_width = 1440
r_height = 900

I also tried to disable one of the monitors via nVidia X Server settings and fire up Crysis.

While it certainly works resolution wise, I get bug 26545 (
Crysis2: Red color on highlights of Bumpmap/Specular Highlights). Following suggestions on that bug does not solve the issue for me.

If I return to the dual head configuration, game does not load anymore. No error messages, no CPU activity, nothing.

If I restart X server (dualhead) and start Crysis, it starts at wrong resolution but bug 26545 is gone.

I am using Wine 1.3.23 with nVidia 275.09.07. I hope this makes sense to someone!
