I wouldn't think you could get VAC banned for adjusting postprocess and graphics settings. thou I can only speak from my personal experiences and as such, I wouldn't like to decide or comment either way for you.
Although personally I've been editing all sorts of variable nothings happend to me. I would suggest you take a look at forums.steampowered.com if you have any concerns regarding Dead Island game modifications and or VAC status about such modifications.
