All of the files you get from application data on windows would go in the application data folder located in the All Users folder in wine, at least that's what I do and it works just peachy.
Also I'm using version 1.1.10 with the files that I used to get dreamweaver to run in version 1.1.9 and it's working ok so far, that must mean that the installer doesn't quite work just yet... (considering that you tried to install it with the installer with 1.1.10 and it didn't run), sorry about the whole it must have a regression mindset that I had a couple of days ago, it turns out that there was a problem with my system, I just ended up reinstalling everything and got it to work once again. So you should be able to get it running in 1.1.10 as well if you follow the instructions above.
