I use wine version 1.1.32 (32 bit) on 64 bit Arch Linux, fully patched, _except_ for wine. I play enough on Full Tilt that I have reached the iron level every month this year. I am pretty sure I have not had a crash or an instance of cards disappearing this year = nearly 9 months of daily play. (BTW: I stuck with that wine version because there seemed to be problems with some of the 1.2rcs. I'll probably go ahead and upgrade to whatever is most recent in the Arch repo.)

I don't play many tournaments and rarely play a session longer than 4 hours, so if the problem is something that only happens after long play, I'll never see it.

Full Tilt/wine has been far more stable for me than you describe for many months. I wonder if it might be useful for you to try Fedora (which has worked well for me and is a lot quicker/easier to install than Arch). I have a Ubuntu 10.4 install that I use for testing. I'll play some Full Tilt on it in the next few days to see how it does for me.
