Since 2007 I have tried Bridge Commander with wine in at least ten computers (with different hardware and soundcards), and never got a single issue with it, of course I use ALSA for sound, but as far I remember OSS worked fine (at least in the past), but I can affirm that ALSA is working with no problems in this game, so I doubt that is a wine problem, more likely is a drivers problem.

Also, check that you're not suffering this:

Q: I have upgraded to the latest version of my GNU/Linux distribution and my game or Wine no longer play sounds.
A: Most distributions are stepping forward to PulseAudio sound server, and currently Wine does not have PulseAudio support, in order to make sound work again try this:

Go into winecfg and select OSS as the output. Then whenever you have a run it like:
padsp wine {path to application}
That will route OSS through PulseAudio.
