Make sure only one driver is selected, possibly changing acceleration to 'emulation'. Click 'Test Audio' to see if Wine can access your hardware properly. Also check settings in-game to see if they're set too high/low. Last thought: where is the sound processor? on a card or on the motherboard? Is your distro using it effectively? e.g.: I'm using a ASUS M2R32-MVP motherboard which is an AMD/ATI chipset; onboard Realtek 7.1-channel sound processor. Can use Wine's OSS/Alsa drivers no problem.
