You could read this post about same issue "Team Fortress does not work anymore WINE 0.9.61"
My solution (working on my pc: Ubuntu 3700+, 2Go, 7800GT) : I launch the game with the compiz effect (without disabled compiz) and put antialiasing off in NVIDIA X settings (over.ride application setting). This way works with TF2 and Portal.
