Under the 'Applications' tab select 'Add Application'
Browse to Program Files - Steam - steamapps - [steamloginname] - zombie panic! source - select hl2.exe and click 'open' This should add hl2.exe to your applications list in winecfg.
Select hl2.exe under the 'Applications' tab, click the drop-down menu for 'Windows Version' and select Windows 98.

This will force wine to run the game as windows 98 and any problems with crashing should be gone.

I tested under 1.1.6 and Kubuntu 8.10b1 w/nVidia 177.80 drivers on a 9800GTX+ and received similar results:
I can start the game, and play for some amount of time, but it will eventually crash: Just like CS:S, which isn't surprising given that this is a mod on the same engine.
