HOWTO
Installing and Running Safari
(recommend to use latest wine) ­
  1. Download winetricks (http://www.kegel.com/wine/winetricks) and run
    sh winetricks corefonts flash
    (corefonts prevents a crash; flash lets you view flash pages.)
  2. Download Safari 3.2 "for Windows XP or Vista" (without Quicktime) from http://www.apple.com/safari/ and run it with
    wine SafariSetup.exe
    Deselect Install Bonjour for Windows and Install Apple Software Update.

  3. Start Safari.exe from ~/.wine/drive_c/Program Files/Safari/.

Flawless installation, when running it has some minor issues:
"view source" opens an empty editor window and some popups look bad and behave strange, like rightclick on a bookmark/select "edit name": a big black rectangle appears, with part of the popup in it. To actually use it, i had to minimize Safari with the taskbar to get the popup in the lower left corner of the screen, still a bit distorted but at least usable.

The most important task however (which is rendering websites) seems to work ok, so i'd put it between "bronze" and "silver".

Safari on Kubuntu 8.10 Wine 1.1.20

I tried installing Safari without Bonjour and it scceeded. It started up as well, but after setting a new (local) homepage it crashed.

Therefore: garbage, no bronze medal.

Window Maximize and Open New URL

Regarding Otso's report I have no problem with window maximizing or typing in new addresses and hanging. These features work for me. I only had this problem when I had installed Safari with Bonjour and Apple Update.
