Additional Comments
"winetricks dsound directmusic" is still required. Furthermore, after applying the 1.108 patch, make sure to use the patched EXE. I've been playing so roughly an hour from a saved game, done several boss rushes with characters other than Louie and have not experienced a single crash.

Fixing 3d models
by Jeremy Chin on Wednesday April 20th 2011, 4:30
It may be a while until wine is properly patched to handle the 3d models (see the bug for details)
If you're using wine git, you can do a 'git revert 8cbc6e', which will make it work but could cause instability in other apps. I somehow got a patch into the tree that hacks around the bug, which was quickly reverted - this undoes the revert.
This patches the recettear binary to work even if the system claims not to have blending (effectively the same as the fix above). The resulting file should have an md5sum of 7e185d7cb2fc63e9a654d13b82714d7a .
The xdelta will probably fail if you're using the steam version (and steam will just fix it anyway). To fix this grab the 1.108 patch from Carpe Fulgur, put Recettear.exe in the steam folder (steam/steamapps/common/recettear/recettear_ns.exe or something), then patch and use that binary instead, from outside steam.
