Set your Windows version to Windows 98 (XP may also work, but I used 98 since it seemed most appropriate given the game's release date).
On the "Sound" tab, set "Hardware acceleration" to "Emulation".
The installer (setup.exe) will only start when the current working directory when running "wine setup.exe" is the directory in which the first CD is mounted. While the game comes on 3 CDs, there is no need to switch CDs during installation (hard disk install is less than 2 MB), so this doesn't create any problems.
Also, the installer really wants the drive it is run from to be "D:", so adjust your drive mappings in winecfg if necessary.
