What works
Almost everything, very stable. You can edit pics, save them, all the basic things you can do on Windows.
What does not
On WINE 0.9.2: Save for Web Dialog, Switching extentions in the combobox with keyboard when saving a file, the toolbox windows always apear on top on every workspace, even if you minimize Photoshop if you don't have the virtiual Windows desktop turned on. If you have the virtual Windows desktop turned on, the toolbox windows might disapear and the main window can get a scrollbar inside it for some reason.
On WINE 0.9.3: Nothing, Photoshop gives a hardware error message and turns off.
Note: ImageReady still works under 0.9.3
Workarounds

When you want to use the clone tool, you'll find the following useful:
ALT-Click is intercepted by most window managers and used as the "move window", so you have to either use shift-alt-click instead, or configure your window manager to use something else for "move window". For instance, on Ubuntu, do System / Windows / Movement Key, and pick "Super" instead of "Alt". See also the codeweavers FAQ.
Thanks to earther for the following email:
I was having problems with the Photoshop 7 ALT-Click keybinding in a new Debian install running Compiz. I did the standard window manager tweak but it still didn't work properly. Then I discovered an ALT-Click keybinding in the Compiz Window Management > Move Window > Initiate Window Move settings. I changed it to 'super' like in Gnome window management and voila, it seemed to get it working again in Photoshop. You might want to add that bit of info to the clone tool info on the Photoshop 7 page. earther
