Additional Comments
Works perfectly out of the box, virtual desktop is no longer required to play the game. Performance is not as good as Windows, but it works fine at the default settings and all the graphic settings seem to function fine.

This HOWTO covers how to fix two graphics problems that I experienced on 64 bit Fedora:
-Black screen on launch
-"Halo" effect
-Corrupted macro icons
FIXING: Black screen on launch
Symptoms: The updater and patcher work fine, but once the "Start Game" button is pressed, nothing appears but black screen, and the client crashes a couple minutes later.
Fix: Change winecfg for patcher.exe (Found in C:\Program Files\Perfect World Entertainment\Ether Saga Online\patcher\patcher.exe) to run in a virtual desktop. Worked for me up to resolution 1680x1050 - if the buttons go off the bottom edge of the screen, adjust the resolution of either the virtual desktop or the app itself (under "Settings" from the launcher).
FIXING: "Halo" effect
Symptoms: This is somewhat of an odd glitch. Essentially, a halo of visibility hovers around your game character - you can see objects, NPCs, monsters and other people in this halo and behind the character, but not in front. This makes the game practically unplayable.
Fix: Fix this by tuning the graphics settings: set Water to its lowest level- this for me created an issue with water appearing in odd places, so turn off Shadows to fix the second glitch.
FIXING: Corrupted icons and loading screens
Symptoms: Your icons, or most of them, look like a horrid mess. Yikes.
Fix: Heema kindly posted a guide in the comments, relinked here: eso-forum.perfectworld.com/showthread.php?t=50881
This involves applying a patch to Wine. You do not need to replace your current wine install, but you do need to compile Wine yourself in order to apply the patch.
If you want to use two versions of wine, be wary of the command you use to load Ether Saga under the new Wine - you must use the path you installed to, not simply 'wine'.
