Everything, I finished the game without seeing a bug. The DVD remastered version works perfectly out of the box (no crack is needed for the copy protection).

As I finished the game, I don't know what I could have missed...
To enable the keyboard, you should configure wine to emulate a virtual desktop (using winecfg). If some speech are missing or are cut, try to run wine whith a higher priority (as root or using nice). Once again it is the dsound buffer underrun bug... I have the remastered DVD version, and the problems seems to appear only in the original CD-ROM version. I think it comes from the video format used in the CD-ROM version (MS WMV8 codecs needed).
