Successfully played through single player campaign. Movies. Menu looked fine. Was able to use 3d acceleration and 16bit color. CD audio.
What does not
Game crashes unless you check the "emulate a virtual desktop" box in winecfg.
What was not tested
Multiplayer. Software renderer.
The game was very playable the whole way through. The fps sections seemed perfect (light saber too). After setting winecfg to emulate a virtual desktop, the game was completely stable.

To work around the menu problem, start the main application like this:
cd ~/.wine/drive_c/Program\ Files/LucasArts/Jedi\ Knight/

set these to native using winecfg
