Since my last test result I totally wiped my Wineprefix and cleanly downloaded and installed again Serious Sam HD: First Encounter After switching sound API via sfx_iAPI console command I restarted the game. For OpenAL and DirectSound console said it failed to load the sound API DLL. Wine uses ALSA and was compiled with OpenAL support. Sound works still fine for me in Team Fortress 2. Even though this was a fresh install, it displayed on first startup all levels and not just Hatshepsut, like it should and did on my Windows 7. Graphic card is Nvidia Geforce GTS 250 with the Nvidia 190.42 drivers The problem with the turquoise textures got better after I set all graphic options to lowest but still happend then.

The game can only be installed using Wine 1.1.34 or newer.
However it's recommended to use the latest Wine version to install it without doing anything.
To install the game on older versions you'll have to bypass the "Error 53" problem.
Use the patch from the following link: bugs.winehq.org/attachment.cgi?id=24845
Then compile Wine and run the game.
If your Wine is built without GStreamer support you can fix the game crashing by fetching ir50_32.dll from the Internet or Windows XP SP2, and putting the library next to the game exe file:
