What works
Nearly everything tested, especially for xls and xlsx files.
What does not
When an XLSM file is opened, every time the mouse moves over a row or column header, wine/execelviewer displays a "not enough system resources to display completely" dialog. Plenty of RAM available. Spreadsheet works fine in native Excel. Popups are preventing normal use. ExcelViewer docs says that macros aren't supported by the ExcelViewer, so macros shouldn't be preventing wine from running the ExcelViewer on a xlsm.
