Latest game version on Steam, with or without expansions or DLC.
There is a native Civilization 5 port in Steam, but the Linux port is not compatible with a few very popular, Windows-only mods.
Everything - I tested starting a new game as well as loading a save in 1993 on Huge Map with everything revealed and a war going on, if that works, I'm pretty sure everything else will.

Online play, I checked the servers and they listed so I assume it will work, I had no one to play against at the time so I couldn't test it then.
You need to install the Tahoma Font for steam to work. Install steam from exe from the website and then install Civilization from the Disk, it will update and install everything you need. I have an ATI card, I needed the FGLRX proprietary driver for everything to work right. The Opening movie doesn't show, but that's useless. Set sound to emulation mode.

Also remember to disable in-game community if you are using Steam.
For best results, start with a clean wine prefix, then install vcrun2008, d3dx9_36 and vcrun6sp6 using winetricks, then install the game normally.
DirectX 11 is not currently known to work, use DirectX 9 instead.
Use of downloadable content (DLC) may eventually cause the game to crash after a number of turns. If you are experiencing consistent crashes when near the renaissance age when playing with civilizations from the DLC, disabling any DLC other than the expansion packs is advised.
