Just about everything (at least up to the second part of the game, after the Prologue).
Motion Blur must be disabled in the Graphics Settings menu, otherwise the frame rate is unacceptably low. No DLL overrides are required -- run the Steam installer .MSI file with a clean WINE prefix, and allow it to do all the required setup work.

Get audio to work
Edit "Documents/BioWare/Mass Effect/Config/BIOEngine.ini"
Add the following under the "[ISACTAudio.ISACTAudioDevice]" section:
Ensure "Hardware Audio" is turned off in Sound settings in game
To get the MEUITM installer to work
A custom MassEffectModder.exe must be suppliedThis is seemingly due to it using functions not fully implemented in wine/mono
