I started with a clean wineprefix. No changes or overrides made, did check the option for emulate a virtual desktop. Everything works 100%, in-game videos, audio and gameplay.
Running the game with all settings maxed out, resolution of 1600x1200, smooth framerate.

For Windows and Linux systems who have newer video cards:
The shadow placements may be incorrect â€“ Spot light beams may not appear, flash light beams may not appear, ceiling light beams may not appear.
To fix this do the following:
The textures from the PlayStation 3 port of Tom Clancy's Splinter Cell are higher definition and can be installed by overwriting the existing textures.
The HD textures are mostly faithful to the original textures.
