What does not
The game has an issue with "winegstreamer", and will crash if it is enabled. Disable "winegstreamer" in winecfg, and it should run smoothly.
What was not tested
Deep gameplay, Steam overlay
There seem to be some graphical issues with Khajiit and Orc eyes, as well as tree/character shadows, but unsure if those are wine issues or not.

When playing this game on Ubuntu, I had to install DirectX manually. This may not be necessary depending on your distro, but I needed it for Ubuntu 18.04 when installing 3.0 stable from the software center.
