The hardware renderer doesn't work properly, which makes it hard to change away from it through the interface. Use regedit and change the key HKCU/Sierra On-Line/Gabriel Knight 3/Engine/Rasterizer to "software".

Despite being a download, the game will prompt for CD1 if it doesn't see a CD drive at all. To get around that, run winecfg and add a drive in the Drives tab, then use the Advanced settings to change its type to CD-ROM.
