What works
The game works in its original Steam version of 2012-2013. After the steam installer is launched, that installs VCredist 2008 (MS Visual C++ Redist 2008) and DirectX automatically from Wine 5.0.1. But the game is low in combat by comparison with Windows OS.
What does not
The Steam browser is black when the game starts, and stays black. We can't really interact with it except from the configuration window.
Nouveau drivers don't work with this game here.
Workarounds
It does not resolve the trouble about the black screen, but we can work around it by launching the installer of Final Fantasy VII in the menu bar by the Steam Icon.
Can't use Nouveau drivers for making this game run, I must use my proprietary NVidia drivers for GeForce Go 7400. See comment about it.
What was not tested
Manually adding extra xrandr resolutions can certainly solve the trouble about resolution options in FF7. Nouveau drivers let me choose a few resolutions but the NVIDIA drivers don't, however Nouveau drivers lead to the black screen. So I can try configuring xrandr manually.
I haven't tried to configure the "Nouveau" GPU drivers for better compatibility with Wine. Don't know about a solution here.

Additional Comments
I have trouble selecting different resolutions in the game config panel. That's not a trouble about FFVII itself I think, but compatibility of Wine and the Driver 304.137 on 32bits system here.
This is the most recent update for this nvidia card driver but Wine send me some xrandr12 init error. I can install also "Nouveau" drivers but they don't work for me in this game.

Open driconf and select 'yes' next to: Enable S3TC texture compression even if software support is not available
This worked with my radeon open source drivers.
