This version like many others have limited choice of screen resolutions in game, however you can add your own.
Just go to /home/yournamehere/.wine/drive_c/GOG Games/Unreal Tournament 2004/System look for UT2004.ini and open it up
with your favorite text editor, scroll down until you reached [WinDrv.WindowsClient] and there should be 4 lines below it that shows windowed and fullscreen viewport.
Change the numbers to the pixel size you want, save and it should come up in the resolution that you wanted.
