Installs, runs, can import plain text and Excel files (needs native dlls; see below).
What does not
Everything tested worked, but testing was very limited.
What was not tested
Everything not mentioned above.
Giving it a silver because testing was extremely limited. Needs winetricks jet40 to import plain text (txt, csv) files. To import Excel files, you also need to download Microsoft Access Database Engine 2007 from Microsoft and install it. That's not a Wine bug; according to http://www.tableausoftware.com/support/drivers, you need to do that in Windows, too. I did not test importing other filetypes, but presumably you would have to install the appropriate database engine to do so, just as you would on Windows.

Install winetricks jet40 to enable importing plain text (txt, csv) files. To import Excel files, you must download and install the Microsoft Access Database Engine 2007.
Importing other filetypes has not yet been tested, but presumably you would have to install the appropriate database engine to do so, just as you would on Windows. http://www.tableausoftware.com/support/drivers
