At first, the program won't start because it installs vc redist 2013, 2012 and 2010 incorrectly. You have to manually install these via winetricks after the installation. If you don't, starting Unity will hang on a grey screen.

The Windows version of MonoDevelop will not work on Wine. I was able to use MonoDevelop anyway by installing the Linux version of MonoDevelop 7 and using that to edit the script files. All you have to do is remember to make sure MonoDevelop is using the correct references which are UnityEditor.dll, UnityEditor.Graphs.dll, UnityEngine.dll, UnityEngine.Networking.dll, UnityEngine.Analytics.dll and UnityEditor.iOS.Extensions.Xcode.dll. Mono Develop can't directly access these because "C:\" is seen as an invalid character so I copied them to my home folder and manually set Mono Develop to use those ones.

Additional Comments

Attempting to run the program without installing vc redist 2013, 2012 and 2010 correctly via winetricks will give you a blank grey screen and hang. This is the same reason running Unity 5.6.4 rather than 5.1.1f1 gives you blank grey screen no matter what you do. 5.6.4 requires vc redist 2015 which can't run under Wine which is why most of the garbage ratings are probably a later version. In order to successfully install Unity on Wine, it has to be an old enough version to not require vc redist 2015

I did it on 5.1.1f1 32bit and was able to successfully get it working.

Also, I did this on a 32 bit wineprefix. Not saying it's that I doubt it's possible to run a 64 bit version, but as of right now I don't think you can run anything requiring vc redist 2015. I will take another whack at it on another day.
