downgrade to Reader version 19.010.x since Adobe Reader 2019.012.x has issues with opening files
To get around signing problem when screen greys out, under Preferences - Signatures - Creation and appearance uncheck 'Use modern interface...'

Submitting this installation guide for someone new to wine:
This is the only software that allows users to properly fill out XFA PDF forms. These forms are used by a lot of government agencies and other organizations. You cannot use the mobile versions of Adobe Reader to fill these forms either. You need a windows or Mac version to do this.
On Linux installing the windows Version of Adobe reader on wine allows you to get this ability.
