Steam has a graphical bug in the Library with dxvk, so before adding the Winetriks workaround, install The Witcher 3 in the Library, after installing it, proceed with Winetricks.
dxvk is to fix performance issue using Vulkan instead of default OpenGL rendering.
I tested the classic old version of The Witcher obtained through Steam version 1.32 you can change to this version through The Witcher property on Steam. It is likely that the remaster will also work.
When the CID Project RED launcher is opened change to directx 11 in the same launcher.

Currently with wined3d, The Witcher 3 is still affected by CPU-GPU buffer maps synchronization issue (bug #44315). It severely degrades performance.
Using dxvk instead of wined3d is the best course of action, since it performs very well, and also provides perfect rendering, as long as your Vulkan driver supports VK_EXT_transform_feedback extension.
