Just about everything. Very smooth graphics, no sound issues. I did make some changes to WineConfig, morrowind.ini and the wine registry per other posts for this game.
I'm running the game in Windowed mode on a dual screen desktop (2048x768) using Debian Linux and Nvidia GeForce MX 440 dual head video card. The game res is set at 800x600.
Some changes I've made are as follows:

What does not
Options - Controls: I can't modify the game controls, this freezes the game. I made control modifications in the game on a Windows PC then copied the registry entries to a .reg file. I edited this file, removing any keys not having to do with controls then I imported the file into the wine registry.
Local map views: The minimap and the large local map does not render at all save the indicators for shops, houses, etc. Occasionally there's some promising garbage rendered in these maps.
Character image in the inventory: Just a white square here. No character is displayed.
Inventory bug, weapon rendering bug: Occasionally when I bring up the inventory my weapon is displayed over the inventory boxes. I notice this occurs when the weapon gets rendered with some kind of white outline or "shadow" around it amidst the world environment - bringing up the inventory at this point produces the bug. A workaround is to simply look someplace where the weapon is rendered solid with the environment, then bring up inventory.

Music has to be erased from Data Files/Music prior running the game (required only for Wine < 0.9.36).
When game ask about mp3 files, press Esc.
In winecfg set vertex shader mode to hardware. If you've got Intel Corporation Mobile GM965/GL960 Integrated Graphics Controller (Video card), make sure you deselect "Vertex shader support" in winecfg, otherwise you won't be able to exit the ship in the beginning of the game.
In winecfg set winver=win98 for best application behavior.
Make following changes in Morrowind.ini file:
