Workarounds

Normally the game will hog a bunch of system resources and make your computer unusable until you restart it, before running the game go to its installation directory (in my case ~/.wine/drive_c/GOG Games) and open sshock.ini, on the 30th line you'll see: "SoftRenderer=Off", change that so it reads: "SoftRenderer=On". The game ran without a hitch after doing so.

As mentioned previously, to get the music to work you need to install "fluidsynth" and "fluid-soundfont-gm" then run this command in the console before running the game:

fluidsynth --audio-driver=alsa /usr/share/sounds/sf2/FluidR3_GM.sf2

What was not tested

Have yet to play the game from start to finish, there were no hiccups in the three hours I did play it however.
