What works

I got single player to work fine on Wine no problems. 

You must disable triple buffering in the User Config menu in order to get the flying part of the simulation to Work.  

I would also suggest disabling all graphics options in Winecfg (ie Automatically capture mouse, allow window manager to decorate windows, allow windows manager to control windows, emulate virtual desktop - all unchecked!)
