What works
I only played for a few hours, but with the exception of changing screen resolution described below, everything I tried worked.
What does not
The game crashes when changing resolution, and sometimes when changing video settings.
If there are other things that don't work, I have not yet found them.
Workarounds
If you edit the file:
steam\steamapps\common\BioShock 2 Remastered\Build\Final\DefaultOptionsl.ini
you can manually change screen resolution. When the game loads it will happily use those settings.

Wine 3.3 STAGING. See https://github.com/wine-stagin... for a working fork of wine-staging that is still being maintained.
I was able to use the full patch set and do a full compile for both 32 and 64 bit Wine.
I enabled CSMT and left everything else at default.
I know they don't like to hear "everything works", but with the exception of changing resolution, everything I tried works and works good. AND performance is excellent!
BioShock 1 Remastered suffers from horrible performance, but Bioshock 2 remastered screams! The game is *very* playable and runs very well.
There may be some game stopping bugs somewhere during game progression, but I have not yet hit any of them.
Whatever they did, the current version of wine plus the staging patches seems to have done the trick. This game works well. If not for the crashing when changing resolutions, it would get a Platinum rating.
