Document management, site management through FTP and other, visual design tools within the program, extensions doing CSS visual design (used various Studio VII extensions), and normal document modifications. Site commands such as change links site-wide also seem to work fine.
Seems quite stable under WINE; no unexpected application quits so far, consistently working on all counts. Minor detail is that it doesn't quite size correctly when it first opens -- slightly bigger than my desktop -- but once you maximize it, the fit is perfect.
Note: the install goes incredibly fast, so no worries if it installs in a blink -- it really does install.
What does not
When you install, Extension Manager does not automatically install alongside it. You will need to install Extension Manager separately if you want it. (Freely downloadable from the Adobe site). Extension manager installs without an issue and works without a problem.
Look and feel when you browse within the file system is not perfect on my machine; files and folders all have the same icon, so you need to look at the file extensions to determine which is which. Not unusable, just a bit annoying. This does not happen in the file management Window within Dreamweaver itself, just when you click Browse from within a dialog to find a file.
What was not tested
Did not test database connectivity
Did not test Preview in Browser (because I don't have a browser installed with WINE that I care to use)
Could not test any interaction with the Studio 8 Suite; no other apps installed from the Suite.
I was impressed with this install and the way the app functions under WINE. I had tried a hack version under both WINE and CrossOver, and that "recommended" method of copying files between a Windows install and the WINE directory ran slower and with more bugs than this straight install under WINE.

To make Dreamweaver 8 run to the known point of operation, delete all of the startup files from C:\Program Files\Macromedia\Dreamweaver 8\Configuration\Startup\
