Version is not publicly available, the version number is inside the .exe file, part of the nupkg.
To see your version, there is a tool called "exiftool".

What works
On Linux, was able to start whatsapp, register QR code. can send/receive messages. can download images
What does not
1) Install problem (need a 'normal' windows user)
2) no 'X' quit button, only minimize and Maximize.
3) desktop notifications only display sender's avatar but no text of the message
Workarounds
Downloaded 64 bit version of Whatsapp desktop from whatsapp.com/download
Created 64 bit win7 bottle. Using Winetricks, installed the MS fonts.
Installer fails, needs to be run as a 'normal windows user' instead of an 'admin windows user'.
Copied 2 directories from existing Windows 10 64 bit install:
C:\Users\MyUser\AppData\Local\WhatsApp
&& C:\Users\MyUser\AppData\Roaming\Whatsapp
into the wine bottle.
The WhatsApp executable is in the AppData\Local directory
On Linux, was able to start whatsapp via wine /path/to/AppData/Local/WhatsApp.exe and register QR code.
