What works
Everything except for the offline log parser.
What does not
BoS.LogParser.Offline.exe doesn't work which results in the ingame stats not working when playing offline. The reason It's not working is because it requires .NET 3.5 64 bit which doens't work in wine.
Workarounds
It's not really a fix, but to keep a window from frequently popping up saying that BoS.LogParser.Offline.exe requires a certain version of .NET just rename or delete Program Files (x86)/1C Game Studios/IL-2 Sturmovik Great Battles/data/Lparser/BoS.LogParser.Offline.exe

To install it setup a 64 bit wine prefix and run winetricks corefonts dxvk dotnet40. After that run the installer. When it wants to install .NET 4.0 just click cancel. Install DirectX when prompted.
