What works
There is an installer, but it also just comes with a directly-runnable LOOT.exe, so that's the route I went with.
If the game is installed into a totally-clean WINEPREFIX, it will technically run, but does not seem to be able to actually manage any mod files (at least with Skyrim, which was the only game I tested).
What does not
When started in a totally clean WINEPREFIX all by itself, the app will run and bring up a settings dialog, but even manually putting in a path to an existing Skyrim installation (via the Z:\ mount) just results in an application error that it can't read the game files properly.
When run from a WINEPREFIX which does contain a Skyrim Steam install, the app crashes on startup pretty much right away, with:
wine: Unhandled exception 0x40000015 in thread 9 at address 0x527790 (thread 0009), starting debugger...

The app says it requires MSVC 2017 Redist, which I installed with winetricks, but that didn't change the launch behavior at all:
