Everything that I know of.
What does not
Sound. Opening graphics. Does not return my screen to original desktop settings after exit. Remains at 800x600 or other chosen setting in the game.
What was not tested
I fresh installed this on a clean 1.1.30 Wine with no new DLLs or no modifications. Installed, opened, and was able to play the game. I built rides, etc without issue. Cannot get expansions to work, will be adding test data for those soon. Sound does not work. Opening graphics do not work. Refuses to return my desktop to its original settings upon exit. Otherwise, finally working! I went for Bronze because I did want to give it a higher rating that it probably warrants at this point.

This is a how-to I posted over on shyguy's world on installing RCT3 when you have an nvidia optimus enabled graphics card.

MP3 background music works fine.
Convert all music in /Atari/RollerCoaster Tycoon 3/Music/ to mp3 using ffmpeg. Then replace .wma with .mp3 in MusicGenre.txt
I will post a more in depth how to tomorrow when i have time.
however i did do a quick test with summerair.wma which is the default music and it seemed to work.
Please note that improving Mac Compatibility for RCT3 is taking a back burner as this game has now been released as a native Mac application as seen here:
