What works
Building editor, camera tutorial, changing the resolution (fullscreen or not), installation, menu, scenario editor, and sandbox mode.
What does not
Changing some quality settings while the 3D simulation is running. It could either not happen (bloom?) or crash (some LOD setting), if you can even get the settings window open in the first place.
WMA files. They simply don't play.
Using the "p" key to play/pause the simulation. The buttons work fine, however.
Quitting. Normally that is. It could crash exit (hey at least it still exits) or not. That was done by leaving a sandbox game without saving and then exiting the game.
If you're unlucky, the entire GUI disappears when you open the settings window (while in the 3D simulation)!
Also, using the backspace key to close the topmost window does not seem to work on the main menu while the settings window is open. This might be RCT3 itself, though. The "p" key problem definitely isn't.
Workarounds
What was not tested
Everything not mentioned, including Soaked and Wild expansion packs (which I do own), and using MP3s instead of WMAs for music. Probably all of the modes work (with some problems here and there).

Somewhat flickery, especially on main menu. It's bearable. I did get some lag until lowering quality settings, but that's most likely because I'm using an ATI Radeon HD 2400 Pro w/ 256MB DDR2. After the splash screens (oh the wait, especially with expansion packs!) the game goes into a blank screen (black or white) with a cursor for a while. When you get to this, just wait.

MP3 background music works fine.
Convert all music in /Atari/RollerCoaster Tycoon 3/Music/ to mp3 using ffmpeg. Then replace .wma with .mp3 in MusicGenre.txt

I will post a more in depth how to tomorrow when i have time.
however i did do a quick test with summerair.wma which is the default music and it seemed to work.
Please note that improving Mac Compatibility for RCT3 is taking a back burner as this game has now been released as a native Mac application as seen here:
