What works

As the previous versions it seems to do most of it jobs.

What does not

It needs a bit workarounds for the installation process to work. In the first phase, it stops after the extraction process, in the second phase you are not able to accept the license agreement.

Workarounds

The workaround is basically the same as for ChemDraw 14.0. i first set a 32bit bottle via

WINEARCH=win32 winecfg

and installed via winetricks

gdiplus
vcrun2013
dotnet40

i starts the cos19.0.exe normally, but as the installation process stops at least at license process, you can cancel it there. Then you need to open

~/.wine/drive_c/users/{Your Username]/Application Data/PerkinElmerInformatics/Installers/cos19.0/PerkinElmer/ChemOffice/

and start the PerkinElmer_ChemOffice_Suite_2019.msi

This at least was the workaround that worked for me.

What was not tested

I just started it, but structure drawing, shortcuts, and all the basic essential tools seem to work. The SciFinder^n plug in seems not to work without a workaround, but it's at least able to command the browser to open scifi with the search.
