What works

These instructions (from above) worked great for me:

Installation and Single-player Gameplay

To Install:

1. Extract all 4 CD images to a single directory
2. Mount CD 1 to a virtual drive
3. Run Setup.exe from the folder from Step 1
4. At 95% it will ask you to insert CD 1, point it at the virtual drive from Step 2

To Play:

1. Mount CD 2 to a virtual drive
2. Run the game

What does not

Experimental screen resolution in the setup menu caused the map scroll function to malfunction within the game. Setting to  800x600 or lower solved this issue.

Workarounds

What was not tested

Did not test multiplayer as instructions said it would not be usable.

HowTo / Notes

Multiplayer via Directplay
Mentioned in a comment by zsolty_szasz:

Multiplayer can work, but requires some setup first.

The problem is with the current DirectPlay implementation. Read here how to set it up: http://wiki.winehq.org/DirectPlayGames

To get multiplayer working for games that use a DirectPlay version prior to 8, place the following DLLs:
dplayx.dll, dpnet.dll, dpnhpast.dll and dpwsockx.dll in this archive in WINE's windows/system32 directory, then add DLL overrides (native, builtin) with WINECFG.

HOWTO
In case of any problems be sure to see the instructions on http://wiki.winehq.org/Infinity_Engine_Games

2015-01-31 Admin note: the following was extracted from a user comment made in 2008 and may not be relevant to current Wine.

cd into the BG-install directory then cd there into temp/

now

"ln -s default.tot default.tot"

which creates a cirular symlink from default.tot to default.tot
