I couldn't get a higher solution that 640x480, but this could be because of my grafics card (Geforve4 mx440).

You must have the following set in your winecfg (this can be done by typing winecfg in the terminal)

Also, the game will only start correctly if you run the RunGame.exe executable, located on NHL 2005 Disc 2.
