Additional Comments
Works well, but mouse pointer appears at the center of the screen. Crashes when run outside of a virtual desktop. Has crashed once when exiting to menu. The inability to control brightness is frustrating as the game can be too dark to play but is mostly fine

you MUST install "iv5play.exe" from the game disc
if you want to view the cinematics then you will also need a native quartz.dll

First question: how do you start the game in window mode?
Secondly here is the result if I don't try to start in window mode:
fixme:win:EnumDisplayDevicesW ((null),0,0x33f6a8,0x00000000), stub!
err:x11settings:X11DRV_ChangeDisplaySettingsEx No matching mode found 1680x1050x16 @0! (XRandR)
err:x11settings:X11DRV_ChangeDisplaySettingsEx No matching mode found 1680x1050x16 @0! (XRandR)
At which point I get a blank error box.

schedtool -a 0x2 -e wine thief2.exe
(This was adapted from similar advice by David Hall in the "Command and Conquer Gold" AppDB comments)

taskset -c 1 wine thief2.exe
by Paul Bredbury on Saturday January 1st 2011, 4:14
taskset -c 0 /usr/bin/wine thief2.exe
or
schedtool -a 0x1 -e /usr/bin/wine thief2.exe
Also, I get a black screen and crash after loading a game, but this fixes it:
echo -e "[HKEY_CURRENT_USER\\Software\\Wine\\Direct3D]\n\"DirectDrawRenderer\"=\"opengl\"" | wine regedit -
