The game runs very good (including all videos) and is possible to complete. You should start the game via the launcher "Grim.exe" (not with the other .exe file), and also set your X-Server to 16-bit color depth!
What does not
Installation and patch donīt work with wine 0.9.11. Sound with ALSA.
What was not tested
maybe there is a wine version between 0.9.11 and 0.9.6 which can install, patch and also run the game.
I used wine 0.9.27 for installing and 0.9.6 for the patch, only then the game runs well with 0.9.11!!!

Note that the version 1.01 patch, Gfupd101.exe, must be run in the following way:
$ wine start /unix
This is due to the patches reliance on windows explorer adding double quotes when passing command line string in ARGV. Wine's start.exe implements this quirk with the /unix switch.
