What does not
The mouse cursor lives on a translucent white rectangle and may disappear after some time.
Also after some time (~15 min) the frame rate starts to slowly drop until after some hours you're at 1 fps. This might be related to the game leaking memory and finally giving OOM-Errors like these:
err:d3d:resource_init Out of memory!
err:d3d9:device_parent_CreateSurface (0x122014) CreateSurface failed, returning 0x8876017c
fixme:d3d_texture:texture_init Failed to create surface 0x251d9450, hr 0x8876017c
This might be around the same time the mouse cursor disappears. All of the above means you'll have to restart the game once every one or two hours. Once every three or four hours the game might crash, but that's the same as under windows and with the leakage problems above, not surprising.
What was not tested
Custom Tracks & Flatrides, as they never were supported officially in the game. I don't doubt they would work, though, if you are careful.
Remember to save your park every 30 mins or so.

MP3 background music works fine.
Convert all music in /Atari/RollerCoaster Tycoon 3/Music/ to mp3 using ffmpeg. Then replace .wma with .mp3 in MusicGenre.txt
I will post a more in depth how to tomorrow when i have time.
however i did do a quick test with summerair.wma which is the default music and it seemed to work.
Please note that improving Mac Compatibility for RCT3 is taking a back burner as this game has now been released as a native Mac application as seen here:
