I have not played this version extensively yet.
The tested version was the GOG version, which contains no DRM. The graphics resolution can be adjusted to your screen resolution by editing "options.txt", which is contained in "~/.wine/drive_c/users/$username/Application Data/Atari/RCT3". Replace $username with your username and be aware that the folder names within "Application Data" might differ for other, older versions of RCT3. The first line of options.txt reads "Resolution 1024 768" or something similar. Change to your screen resolution, i.e. "Resolution 1920 1080". Do not change the resolution inside the game. At least for Mint Cinnamon, it was mandatory for the in game resolution to match the actual screen resolution, otherwise the picture started to scroll at the edges. If you have more than one screen, turn the additional screens off.

MP3 background music works fine.
Convert all music in /Atari/RollerCoaster Tycoon 3/Music/ to mp3 using ffmpeg. Then replace .wma with .mp3 in MusicGenre.txt
I will post a more in depth how to tomorrow when i have time.
however i did do a quick test with summerair.wma which is the default music and it seemed to work.
Please note that improving Mac Compatibility for RCT3 is taking a back burner as this game has now been released as a native Mac application as seen here:
