I attempted to install Outlook 2007 on wine because I am not able to Authenticate to my Exchange server via Evolution.

Hang after password change

If your Outlook seems to hang indefinitely after changing your Exchange password (via other means than Outlook itself, I don't even know if it's possible in Outlook), search for your account name in the registry and delete the whole key. I think it was located somewhere in HKCU\Software\Microsoft\Exchange. After deleting the key and running Outlook again, you'll be asked for the new password and everything should be fine.
