If you don't own a MIDI keyboard, you have to install timidity or fluidsynth. It turned out timidity doesn't play well with PulseAudio, when startup as a system wide daemon. In order to work around this issue, you have to disable the timidity daemon, and just start it at user login (for instance, in GNOME, you have to add the following startup program : timidity -Os -iAD)
