After installing MSXML and MDAC, ProphWin.exe will start up and log in, and display the main menu.
Some menu items will open and work correctly, like receivables customer maintenance.
What does not
Many menu items crash the application completely with this error
$ wine ProphWin.exe
X Error of failed request: BadPixmap (invalid Pixmap parameter)
Major opcode of failed request: 54 (X_FreePixmap)
Resource id in failed request: 0xe09c76
Serial number of failed request: 203998
Current serial number in output stream: 204091
What was not tested
With the app crashing so often, and therefore not really being useable, transaction processing and reporting was not tested.

Wine 0.9.42 (Jul 2007) includes a fix for bug 7959, which fixes the PixMap issue, and makes Prophet a lot more useable.
Now that this is resolved, some more substantive testing can get underway.
Looks like printing may be the next major issue.
