What works
Installation. Trick to get past the EULA is to kill the noname process at the top of system monitor. At least that is how I got it to go through the entire install.
What does not
There seems to be an issue with recognizing the 3D video capabilities of my video driver - Intel 82846 on board video with 64 MB of shared memory. The driver indicates that it can do the required 3D acceleration, however, the application under wine detection does not agree. Tried using the dxdiag to determine if the information provided by wine agreed with the capabilities. No clear determination here, it doesn't really find all that many function compatibilities.

Game play as it quit on startup indicating that the video hardware did not meet the minimum specifications.

It would probably run if I could get the video driver to be representative of the 3D capabilities. I don't know if this is a wine thing or a video driver thing.

MP3 background music works fine.
Convert all music in /Atari/RollerCoaster Tycoon 3/Music/ to mp3 using ffmpeg. Then replace .wma with .mp3 in MusicGenre.txt

I will post a more in depth how to tomorrow when i have time.
however i did do a quick test with summerair.wma which is the default music and it seemed to work.
Please note that improving Mac Compatibility for RCT3 is taking a back burner as this game has now been released as a native Mac application as seen here:
