What works
Installation of Palm Desktop 3.0.3 from http://www.palm.com/us/support
Installation of the Hotsysnc 3.0.4 update from http://www.palm.com/us/support
Hotsync docked OK to the xfce panel.
Local syncing to a Vx (serial, ~/.wine/dosdevices/com symlinked to /dev/ttyS0).
A full restore to a replacement Vx worked fine.
Palm Desktop.
Importing a phone list in CSV format.
Palm Installer.
Installation and use of Acrobat Reader 1.1 (http://www.adobe.com/products
What does not
The multimedia quick tour appeared to work, but it used only one monitor and was truncated: my dual-monitor setup may be confusing it.
There's a few additional rendering glitches, but nothing serious.
Workarounds
What was not tested
Modem, network, and USB syncing.
Palm Email Wiz.
Some functionality of Palm Desktop.
The Expense application: when it fires up Excel 2007, I get the error message "opening the VBA
project in this file requires a component that is not currently
installed. This file will be opened without the VBA project. For more
information, search Microsoft Office Online for 'VBA converters.'"
followed by "This workbook has lost its VBA project, ActiveX controls
and any other programmability-related features". This does not appear
to be a Wine issue but a backward-compatibility problem with
Excel 2007 (http://support.microsoft.com/kb/926430),
and for some reason MS don't make the VBA converters freely
downloadable. It's possible that this will work in older versions
of Office, but my OEM licence doesn't give me downgrade rights to test this out.

Additional Comments
Some of the testing (e.g. the full restore) was done on slightly older versions of Wine, probably 0.9.40 or thereabouts.
